Since the days of Adele Davis who started the holistic food movement, I
have been fascinated with nutrition. She was a nutritionist and
introduced "whole" grains and the concept of "whole" foods.
It
was a relief to know that there was a way out of overcooked vegetables
and white, starchy breads and desserts. I clung to her first book,
("Let's Eat Right to Keep Fit”, 1954) as if my life was at stake
despite the negative comments coming from family and friends. They
thought I was nuts for going into green smoothies and eating unprocessed
grains.
I loved her information on how vitamins and nutrients
restore the cells in the body. It all made sense to me. From that point
forward I invested time, money and resources in exploring natural health
solutions. Living a holistic life became a lifestyle.
When I
met Bernard Jensen in the 70’s, I thought he was one of the most radiant
people on the planet. He had a radiance and glow and I could only
attribute it to his vitality through nutrition. I lived and worked in
the community of Escondido and attended his classes. His research in
iridology and investigation of nutrition made sense and I vowed to live
my life with awareness around what rejuvenates and restores the human
body. Nutrition is the greatest, single therapy that can be applied to
healing. When we get to the root of the problem, we can heal it.
This
book contains recipes that are simple and easy for the person who is
juggling many things. If you are interested in becoming healthier and
cleaning up your act around food, try these delicious and nutritious,
feel good foods. In the hurried life that many of us live, we often feel
overwhelmed with responsibilities and focusing on health can be a
challenge. I wanted to make it easier for you with a few easy to follow
recipes.
